Day 23. Still Barking Up the Lemon Tree
HOME– Earlier today, I had a lemony epiphany. I can make lemon bark for the party! I love lemon bark. It’s so simple to make and the taste is all at once zesty and lemony, yet mellow. The texture is crunchy like candy, yet, ever so willing to softly melt in your mouth, leaving behind buttery notes of white chocolate.
And it’s pretty! {Far prettier than my quick shots portray.} All piled up, it looks like a big rock candy mountain- sparkling with flakes of fools’ gold. The soft, crumbly bite of a cookie aside, I am in love with my bark. And during my Thanksgiving holiday rush, I am thankful for how easy this is to make.
Plus, to continue my fawning, there’s no oven involved, so you get all the pure joy of a wooden spoon stirring around and around in a bowl without breaking a sweat in a steamy kitchen.
This recipe is so versatile. Instead of lemon drops, you can swirl in almonds, chopped pecans, orange peel and zest, hard orange candy, the ubiquitous peppermint candy, decadent bits of dark chocolate, or any combination thereof.
Or ramp up the sophistication with a sweetened savory note like spicy pepper preserves, ribbons of candied citrus peel or chillies and dried cherries.
Lemon Bark
20 ounces of White Chocolate
3/4 cup broken/smashed Lemon Drop Candies

Slowly melt the white chocolate on 1/2 power in the microwave. Heat for approximately three minutes. Stir in between minutes. Do not overheat. Let chocolate finish melting on the counter while you stir in candy. Pour onto parchment-covered cookie sheet. Sprinkle with more candy (not candy dust). Place in refrigerator for 5 minutes. Break into bark.

This looks amazing! I make peppermint white-chocolate bark, but I never even thought of lemon, I’ll definitely give it a try!
